Almond Joy Brownie Bites

Candied coconut stuffed into a soft cake like brownie sprinkled with chopped almonds and drizzled with chocolate syrup makes up my Almond Joy Brownie Bites.


Follow the directions for “cake like” brownies on your box of brownie mix. The picture above I used a regular size muffin pan only filling the cups 1/4 full. Pictured below I used a mini muffin pan filling the cups 1/2 full. Either size works well but I prefer the regular size muffin pan. Be sure to grease the muffin pan so the brownies don’t stick and you end up with a mess.

Ingredients:
1 box Brownie Mix (and the ingredients the box calls for)
Chocolate Syrup
20 oz Confectioner Sugar
1 tbs Butter
1 Pinch of Salt
1 14 oz. can sweetened condensed milk
1/2 tsp Vanilla Extract
7 oz Pkg of Angel Flake Coconut

Directions for brownie cups:
Prepare brownie mix as directed on the box for “Cake Like” Brownies.
Grease regular size muffin pan or mini muffin pan (your choice)
Pour brownie batter into muffin pan filling 1/4 full for a regular sized muffin pan or 1/2 full for a mini muffin pan.
Bake as directed.
Once the brownies are done press the bottom of a tablespoon or teaspoon into the brownies making a cup shape as shown below.

Directions for Candied Coconut filling
Mix together in a large mixing bowl:
 20 oz Confectioner Sugar
 1 tbs Butter
 1 Pinch of Salt
 1 14 oz. can Sweetened Condensed Milk
 1/2 tsp Vanilla Extract
Once well blended add in the 7 oz Pkg of Angel Flake Coconut and continuing mixing. The mixture will be sticky.

Assembly Directions
Once blended scoop out candied coconut and place in the brownie bowl.
Sprinkle with chopped almonds or center an almond on top.

Drizzle with chocolate syrup.
