The only reason why I grow mint on my back deck is for cocktails. My favorite mint infused cocktail is the Mojito. I will suck these down one after another on a hot summer day! Today I switched out the white rum for Cruzan Coconut Rum and added some pineapple juice for a flavorful twist on the classic! These refreshing tall coolers are a must have summer cocktail.
- Fresh squeezed juice from half a lime.
- 6 mint leaves
- 1 tsp sugar
- 2 oz. coconut rum
- 3 oz. pineapple juice
- 3 oz. club soda
- 1 cup crushed ice
