Every year holiday baking must include this classic Chocolate Chip Shortbread cookie recipe. We love it, Santa loves it, friends love it, you get the idea. This recipe is simple and delicious. This cookie belongs on the cookie tray or in the cookie tin.

Cut into Triangles

Cut into the shortbread making a +. Straight up and straight across. 

Then make an X. Corner to corner. 

Going back to the original cut of the + you have 4 equal squares. Cut one / corner to corner so each square has an X cut. 

Separate the cookies. You should have 16 triangle cut cookies. 

Presentation

Cut the chocolate chip shortbread into triangles and line them up on a cookie tray or stack them in a gift cookie tin. These classic chocolate chip shortbread cookies are a holiday staple. Shortbread is a simple recipe and so good. It is one of my favorite cookies.

Chocolate Chip Shortbread Cookies

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini semisweet chocolate chips

Instructions

  1. In a stand mixer or with an electric hand mixer beat together the butter and sugar until light and fluffy.
  2. Beat in vanilla.
  3. Add flour and salt and continue to beat. The dough will be a crumb texture.

  4. Stir in the mini chocolate chips.
  5. Press dough into 9x9 baking pan (ungreased)
  6. Bake at 350F. for 15 -17 minutes until the edges are golden brown.
  7. Let pan cool.
  8. Slide a knife around the edges and turn cookie out onto a cutting board.
  9. Cut cookie into bars or triangles.

Hi Kristy, When I made this recipe I had an electric oven. I have since moved and the house I am renting now has a gas oven. It was so out of whack and cooked things a few minutes faster on only one side of my sheet pan or pizza! Ovens can be so fickle. If you are doubling the recipe and depending on the size of the pan you are using you will have to bake longer.

I don't have a 9x9 pan, but do have a 12" round Pizza pan. What do you think of using that and serving it as a giant cookie?
