This is breakfast comfort food. We make these on a slow morning were changing out of pajamas before noon is optional. The cups of coffee are endless and the the smell of bacon hangs in the room all morning.

There is no rush on anything. Just the anticipation of a delicious breakfast as the waffle iron turns and the bacon sizzles. It is a peaceful morning with family gathered around the table no loud tv, no rushing around, no “Mom, where are my shoes”. Just a lazy morning with the family and good food. That is what lazy mornings are all about. Getting away from the crazy hectic mornings of the work/school week. And just relaxing.

A slow morning filled with espresso, waffles, and bacon. This is our weekend breakfast. Forget everything about the work week and sit back, kick your feet up, and enjoy.

There is something special waffles. It could be their sweet flavor, or their fun shape. The joy of having melted butter or maple syrup pool in the little squares. Those are the best bites! The kids meticulously pour syrup into each square as if it is a game.

All these waffles need is a pat of butter and heated up real maple syrup. Look on the back of your syrup bottles. Some brands don’t contain a drop of maple syrup. They just have a bunch of ingredients and chemicals to make an artificial flavor that tastes like maple syrup. No thanks! That is not our style.

Waffles from Scratch Recipe

Prep Time 10 minutes
Cook Time 4 minutes
Servings 6 Waffles

Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 egg yolks beaten
  • 1/3 cup vegetable oil
  • 1 1/2 cup milk
  • 3 egg whites beaten stiff

Instructions

  1. In a large bowl mix together the dry ingredients.
  2. In a separate bowl mix together egg yolks, milk, and oil.
  3. Add wet ingredients to the dry ingredients and mix well.
  4. Fold in egg whites.
  5. Pour 2/3 cups waffle batter into a preheated griddle and bake according to your griddle instructions. We bake ours for 4 minutes or until golden brown. Waffle maker cooking times vary.
