Box cake vs. cake made from scratch
Let me just say, box cake mix makes a good cake. There is no shame in making them or any other boxed dessert mix. I had a girlfriend who made a boxed mix dessert for a potluck. She said when she was making it she thought of me the whole time (feeling the guilt of using box mix). SAY WHAT!? The dessert was delicious. I know I have said homemade is better in the past and it is. But the reality is LIFE IS BUSY. LIFE IS EXPENSIVE. If it costs me $1 for box mix, a few eggs and 1/3 cup vegetable oil to bake a cake FAST for my kids who have had a bad day I AM IN! Can I get some thumbs up from the audience? Now frosting is a different story.
This fluffy peanut butter frosting is LIFE. Just kidding but seriously though. It is really good. Because it is so airy and fluffy it doesn’t come out of a piping bag smooth and silky. It is just not that kind of frosting. It has texture. To frost these I used my widest star tip. You can see in the photos that it didn’t come out smooth and stiff. It is a happy puffy cloud of soft peanut butter and sugar.
Peanut Butter Cup Topper
I use Justin’s Mini Peanut Butter Cups. Any peanut butter cup will work. Just cut them in half. If you have the full size peanut butter cups do the same cut them in half. Place the candy on top of the frosting and gently push them into the frosting.
