If you don’t have an Instant Pot you need to get one. Have you ever planned to have a pot roast but got busy and forgot to start it in the slow cooker. By the time you remember it is too late. Um…if I start it now dinner won’t be ready until 10 pm. I have done that more times than I would like to count. Now with my Instant Pot, this pot roast is ready in an hour and a half.

Instant Pot Size and Pot Roast Size

For this recipe, I used my DUO60 6 quart Instant Pot.

My chuck roast weighed 3 lbs. and it was a perfect fit along with the vegetables.

Searing the roast. Instant Pot vs. Large Skillet

I have done both and recommend searing the roast in a large skillet. It is easier to maneuver when searing all sides of the roast. However, if you need to do it in the instant pot, use an oven mitt to hold the pot from spinning. Get the best grip on the beef with your tongs before lifting and turning the meat.

Serving

Transfer the vegetables and roast into a 9×13 baking dish or deep serving plate. This 3 packet pot roast makes a lot of gravy. Then pour the gravy over the top. Serve with dinner rolls and you are all set!

Instant Pot 3 Packet Pot Roast

Instant Pot 3 Packet Pot Roast

Instant Pot 3 Packet Pot Roast. Tender, Juicy and ready in 1 hour and 30 minutes.  

Ingredients

  • 3 lbs chuck roast
  • 1/4 cup flour
  • 1 Tbsp vegetable oil
  • 1 lb red potatoes
  • 3 carrots, cut into 1/2 inch chunks
  • 2 celery ribs, cut into 1/2 inch chunks
  • 1 small onion, sliced
  • 1 cup water
  • 1 packet Ranch Salad Dressing and Seasoning Mix, 1 oz. packet
  • 1 packet Brown Gravy Mix, 0.87 oz. packet
  • 1 packet Zesty Italian Salad Dressing & Recipe Mix, 0.60 oz. packet

Instructions

  1. Press the saute button on your instant pot and allow a few minutes for it to heat. 
  2. Meanwhile flour your chuck roast. 
  3. Add oil to your instant pot. Then place the floured chuck roast into the instant pot. Fit it in as best as you can. It will most likely not sit flat on the bottom.
  4. Let the meat sear for about 3 minutes before turning it over with a pair of tongs. Let the meat sear for about 3 more minutes continue turning until all sides are seared. *See notes for searing in a pan. 
  5. In 1 cup of warm water add in the 3 packets and whisk until smooth. Pour over the vegetables and chuck roast. 
  6. Turn off the Saute and add in the vegetables and pour the gravy mixture over the top. 
  7. Set your instant pot to Manual, High Pressure and for 70 minutes. 
  8. After the 70 minutes allow your Instant Pot to do a "Natural Release" for 10 minutes. 
  9. Transfer roast and vegetables to a serving platter and pour gravy over. 

Notes

This recipe is made with a 3lbs chuck roast. Anything larger will cause a burn message on your Instant Pot. 

I found it to be a lot easier and maneuverable to saute the chuck roast in a large cast-iron pan.

Burnt Food Msg made this recipe impossible to make as written. Even placing roast on a rack didn’t work. The sauce mix sticks to the bottom along with any vegetables that fall down there and it all stocks to the bottom of the pot.

Another one here with the BURN error. I did not even use the saute function first. I browned the meat in a separate pan. I lifted the trivet out and put everything into my reliable 50 y/o pressure cooker. There was a whole layer of scorched stuff of the bottom of the pan presumably from the 3 packet mixture. Won't try this again in the Instant Pot. If I like the flavor a whole lot I will bake it in the oven.

I fixed this tonight and it's my new favorite!! The meat is so tender and flavorful! I did do a couple things different. First, I used a sirloin tip roast because that's what I had on hand. Second, I did not put the potatoes and carrots in at the beginning. I seared my meat and cooked it for 1 hour, added the potatoes and carrots, and cooked for 10 minutes. Perfect!!! Just a FYI...after you sear your meat, add about a cup or so of beef broth to deglaze the brown bits off the bottom of the pot. Otherwise you will get the burn notice.

I also got the burn error and it stuck so bad I put everything in a pot in the oven instead. I had even deglazed the instant pot after browning the beef. Next time I will put the potatoes and meat on the trivet and use 2 cups of water.

This is in my IP now! I was checking back to see if I had missed anything, because I got a burn error not long after I sealed it and walked away. I rearranged everything and added about 1/2 to 3/4 cup of beef stock for a little more liquid. 1 cup of liquid just seems like a drizzle for all of the beefy/veggie goodness! Have you ever had an issue with the burn message with this recipe? Can't wait to taste it. Smells divine!
