Red Potato Salad

This simple Red Potato Salad recipe has all the flavor you are looking for.  It is creamy and chunked full of potatoes and eggs.

  • 4 lbs red potatoes
  • 6 boiled eggs
  • 1 tsp salt divided
  • 3 green onions sliced
  • 1 cup mayonnaise
  • 2 Tbsp sweet pickle relish
  • 1 Tbsp yellow mustard
  • 1/2 tsp ground black pepper


  1. Cook potatoes in boiling water until tender. About 40 minutes. 

  2. Drain and rinse. *optional remove skins

  3. Cut potatoes into bite size cubes. 

  4. Remove yolks from eggs and set aside. 

  5. Dice the egg whites.

  6. In a large mixing bowl stir together the potatoes, egg whites, 1/2 tsp salt and green onions. 

  7. In another bowl mash egg yolks, and add the remaining salt, mayonnaise, pickle relish, mustard and pepper. Stir until blended. 

  8. Gently stir in the egg yolk mixture with the potato mixture until well combined. 

  9. Cover and chill for 2 hours before serving.
