Sugar Rimmed Paloma with Bruleed Grapefruit

Ingredients

  • 2 oz. fresh-squeezed grapefruit juice
  • 1 tablespoon 0.5 oz. fresh-squeezed lime juice
  • 1 teaspoon white granulated sugar
  • 1.5 oz. tequila
  • 2 oz. club soda
  • A shallow bowl of sugar for rimming the glass.

For Bruleed Grapefruit Wedge

  • wedge of grapefruit
  • white granulated sugar
  • kitchen blowtorch

Instructions

  1. Make Bruleed Grapefruit wedges first. Decide how many drinks you will be serving and make all the wedges at the same time.
  2. Make a small slice down the middle of the wedge so it will balance on the rim of your glass.
  3. Lay grapefruit wedges on a heat resistant surface. I used a saute pan.
  4. On one side of the wedges sprinkle a thick layer of sugar. About a teaspoon of sugar on each wedge.
  5. Turn on your blowtorch and hold over the wedge until the sugar melts and bubbles and light burn marks are made.
  6. Only brulee one side of the wedges.

For the Cocktail

  1. Take a grapefruit slice that hasn't been bruleed and slide it over the rim of the glass.
  2. Dip glass into a bowl of sugar then add ice.

  3. In a separate glass mix together the grapefruit juice, lime juice, teaspoon of sugar, and tequila.
  4. Pour mixture over ice in the sugar-rimmed glass.

  5. Top off with club soda.
  6. Garnish with bruleed grapefruit wedge.
