Ingredients

  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 5 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 12 oz package semi-sweet chocolate chips
  • 2 cups Angel Flake Shredded Coconut

Instructions

  1. In your Kitchen Aid mixer mix together the peanut butter, sugar, butter, and vanilla.
  2. Fold in chocolate chips.
  3. Spoon out a tablespoon of dough and roll into a ball between the palms of your hands.
  4. Fill a shallow rimmed bowl with coconut and roll the balls until coated with coconut.
  5. Place on a large cookie sheet.
  6. Place in the refrigerator for at least 20 minutes to allow them to set.
  7. Store in an air tight container. Keep in a cool place.
