I love drinking coffee and eating it too. Especially if it is in dessert form. These are perfect tasty little grab-and-go cakes. The mascarpone frosting with vanilla bean paste is absolute bliss.

Cardamom Coffee Cake Bars

Sweet Cardamom Coffee Cake Bars with a Vanilla Mascarpone Frosting with chopped pecans.

Ingredients

  • 2 tsp instant coffee
  • 1/2 cup milk
  • 1/4 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp cardamom
  • 1/4 tsp baking soda
  • 1/4 tsp salt

For the Frosting

  • 8 oz. Mascarpone cheese, softened
  • 1/2 cup confectioner sugar
  • 1 tsp vanilla bean paste

Garnish:

  • 1 cup chopped pecans

Instructions

  1. Put instant coffee crystals in the milk and set aside.
  2. Beat together butter and sugar.
  3. Beat in egg.
  4. Mix in the coffee milk mixture.
  5. In a separate bowl mix together flour, baking powder, cardamom, baking soda, and salt.
  6. Slowly mix in the flour mixture until well combined.
  7. Spread evenly into a 13x9 baking pan.
  8. Bake at 350F for 18 - 20 minutes.
  9. Let cool completely before frosting.
  10. Spread frosting evenly and sprinkle on the chopped pecans.
  11. Using a sharp knife cut into bars. Clean knife blade after every cut.

For the Frosting:

  1. Mix together all the ingredients until well combined.
  2. Refrigerate for 1 hour before frosting the bars.
