Blueberry Muffins

Blueberry Muffins from scratch using freshly picked blueberries.

Now that blueberries have hit the farm stand I had to make these blueberry muffins. These will make you never want to buy blueberry muffin box mix again. There is nothing better than a freshly baked blueberry muffin out of the oven with a cup of coffee.

  • Dry Ingredients

2 cups all purpose flour
1 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt

  • Wet Ingredients

2 eggs
1 cup of half & half
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 pint blueberries

In a large mixing bowl mix together the dry ingredients.
In a different mixing bowl mix together the wet ingredients.  
Pour wet ingredient mixture into the dry ingredients and mix until just combined. You don’t want to over mix your ingredients. It will make the muffins dense.
Fold in blueberries.
Grease your muffin pan or use paper cups.
Bake at 350 degrees for 17-20 minutes.
Makes 12 muffins
