Now that blueberries have hit the farm stand I had to make these blueberry muffins. These will make you never want to buy blueberry muffin box mix again. There is nothing better than a freshly baked blueberry muffin out of the oven with a cup of coffee.

These muffins are great and the perfect morning snack. If you want to make them extra fancy, try blueberry muffins with crumb topping.

Blueberry Muffins
If blueberries are in season, do yourself a favor and make a batch of these muffins! They are the perfect breakfast to start off the day with.
Ingredients
Dry Ingredients
- 2 cups all purpose flour
- 1 cup sugar
- 3 teaspoon baking powder
- ½ teaspoon salt
Wet Ingredients
- 2 eggs
- 1 cup of half & half
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 pint blueberries
Instructions
- In a large mixing bowl mix together the dry ingredients.
- In a different mixing bowl mix together the wet ingredients.
- Pour wet ingredient mixture into the dry ingredients and mix until just combined.
- You don't want to over mix your ingredients. It will make the muffins dense.
- Fold in blueberries.
- Grease your muffin pan or use paper cups.
- Bake at 350 degrees for 17-20 minutes.
