Blueberry Crumb Bars

Blueberry Crumb Bars have a buttery sweet shortbread crust, fresh ripe blueberries then topped off with shortbread crumbs and baked till golden. These Blueberry Crumble Bars can be sliced into squares for smaller portions. Or slice larger portions and serve with ice cream!

These sweet Blueberry Crumb Bars are going to hit the spot! If you love blueberries and shortbread this is your new favorite dessert.

We could have killed this 9×13 dish in 1 day but we wanted everyone to try these bars first. Everyone loved them. Some even had seconds or took one to go.

Blueberry Crumb Bars

Ingredients for Blueberry Crumb Bars

  • White Sugar
  • Brown Sugar
  • Baking Powder
  • Flour
  • Butter
  • Egg
  • Vanilla Extract
  • Blueberries
  • Cornstarch

Use your Hands!

Let’s get dirty. The best kitchen tool for this blueberry crumble is your hands. So wash them!

Once you get the dough made use your hands to scoop out half of the dough and press the dough into the 9×13 baking dish with your fingers to make the crust.

When you make the blueberry mixture use your hands to toss the blueberries in the cornstarch and sugar.

Spread the blueberry mixture evenly with your hands.

There will be some sugar and cornstarch remaining in the bowl. Pour it in your hand and sift with through your fingers to sprinkle over the top of the blueberries.

Do the same with the remaining dough. Sprinkle the crumbs evenly using your hands.

During the blueberry season, we go a little overboard with EVERYTHING BLUEBERRIES. This Blueberry Crumb Bar recipe is my favorite fresh blueberry dessert.

And picking fresh blueberries at a local farm is pure family fun. Before you go picking be sure to read my tips on how to freeze blueberries. It will save you from ruining your blueberries or having them go bad before you get to use them up.

Plus you can toss some frozen berries in for breakfast smoothie. And we can’t forget the blueberry muffins! Blueberries in baked goods are my weakness.

These bars are also called Blueberry Shortbread Bars or Blueberry Crumble Bars. Another favorite dessert is Blueberry Crumble Pie!

Ingredients

  • 1 cup sugar divided
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • 3 cups flour
  • 1 cup salted butter room temperature
  • 1 egg lightly beaten
  • ½ teaspoon vanilla
  • 2 pints (24 ounces) fresh blueberries
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 375F.
  2. Lightly grease a 9x13-inch baking pan.
  3. In a mixing bowl, combine ½ cup sugar, brown sugar, baking powder, and flour.
  4. Slowly mix in butter, egg, and vanilla until the mixture is well combined and resembles coarse crumbs.
  5. Press half of the crumb mixture into the bottom of the pan.
  6. In a separate bowl toss together ½ cup sugar, blueberries, and cornstarch.
  7. Evenly sprinkle the blueberry mixture evenly over the crust.
  8. Evenly sprinkle the remaining crumbs over the top of the blueberry mixture.
  9. Bake for 40 minutes or until the top is lightly browned.
  10. Allow to completely cool before cutting.
