Grilled Tomatoes with Pepperoni

 

Grilled tomatoes drizzled with olive oil and garlic then topped with a 3
cheese blend, herbs and Hormel Pepperoni. A few minutes in the broiler
to melt the cheese and heat the pepperoni and you have yourself a delicious appetizer.

Warmer weather is on its way and it is time to pull out the grill. In the Spring we grill everything. We  miss grilling our food so much over the winter that we feel we have to make up for lost time. We love pepperoni! There is always a pack in the fridge for snacking, sandwiches, or homemade pizzas.We fired up the grill this past weekend for these Grilled Tomatoes with Hormel Pepperoni. They make the perfect appetizer before a grilled steak dinner.

Grilled Tomatoes and Pepperoni Ingredients

 

This appetizer is easy to prep, cook on the grill, and put together. Prep the food by slicing the tomatoes in half, mixing the oil and garlic together, and laying out the cheese, pepperoni, and thyme. Oil the grill and turn it on high.

While the tomatoes are face up, spoon the olive oil and garlic mixture into the tomatoes. If some of the oil spills out it will cause the fire to flame up. If it happens, no big deal, just be aware that it could happen. Once they are ready to come off the grill put them on a parchment paper lined tray and sprinkle cheese, pepperoni, and thyme on the tops and put them in the oven under the broiler to melt the cheese and heat the pepperoni.

Grilled Tomatoes and Pepperoni

makes 8 servings
Ingredients
4 tomatoes sliced in half
3 Tbs olive oil
1 tsp minced garlic
1 cup 3-Cheese blend of Parmesan, Asiago, and Romano
16 slices Hormel Pepperoni
1 Tbs thyme

Directions
Oil your grill and set on high heat.
Place tomatoes face down on the grill and grill for 4-5 minutes.
Turn the tomatoes over and spoon olive oil mixture into the tomatoes and continue to grill for 3 more minutes.
Remove from grill and place on a parchment paper lined baking tray.
Place 2 Tablespoons of cheese on the tomato. Press some of the cheese down in the cavity of the tomato.
Place 2 Hormel Pepperoni slices on top of the cheese.
Sprinkle thyme over the tops of the tomatoes.
Turn your oven broiler on high and broil tomatoes for 2-3 minutes. Just enough for the cheese to fully melt and the pepperoni is heated.
Serve immediately.
