Nothing says Fall like apple recipes. Ok well maybe pumpkin spice everything says it better. You know how us food bloggers are. I even saw a shout out for pumpkin spice dog treats. My dogs are more of steak and potatoes kinda dogs. To each their own.
Let’s start that paragraph over again. Nothing says Fall like apple recipes. Even my boys are ready for all the apples they can eat. My youngest requested some apple muffins. I thought that was a brilliant idea and already had strawberry, pear, and blueberry muffins on this website. How could I leave out apple muffins?! Plus I can’t say “no” to my little guy. He has come up with a few recipe ideas that I have developed on this site. Not too shabby for a 5 year old. He will be promoted to creative director when he turns 6 years old.
There are 2 kitchen tools I can’t live without. My peeler and my corer. When you have kids that love apples these tools are used nearly daily. Apples and peanut butter are a favorite after school snack. Just like crusts having to be cut off sandwiches the apple have to be peeled. Kids…they are fun. Speaking of kids and fun my boys have a kid friendly YouTube Channel. It is perfect for kids between the ages of 4 – 9 years old. Yep! Just plugged my kids youtube channel on my food site. I can also sell you some boy scout popcorn if you are interested.
A little note on mixing the muffin batter.
These apple muffins are moist and delicious. When they are warm right out of the oven they are irresistible. The trick to great muffins is not over mixing the muffin batter. You want to mix the ingredients with as few strokes as possible. If you use an electric mixer you will over mix and they will be hard like hockey pucks. It is best to mix muffins using a wooden spoon.
