Chicken Salad and Blackberry Croissant

Chicken Salad and Blackberry Croissant

Trust me! You are looking at a fabulous chicken salad sandwich. You may have scrunched up your face at the thought of blackberry sauce on your sandwich. Believe me it makes a wonderful spread for sandwiches.

This past week I have been sharing different ways to enjoy my homemade blackberry sauce. It is simple to make with just a few ingredients.

To recap all those delicious ideas let’s start with dessert. It makes a fabulous dessert topping as seen here: Chocolate Cake & Blackberry Sundae.  You can drizzle it over cheesecake or pound cake to add extra flavor.

Or check out my Croissants with Cream Cheese and Blackberry Sauce and other breakfast ideas. One batch of this sauce can be used for breakfast, lunch, and dessert. Keep sauce refrigerated until ready to use.

So let’s talk about this sandwich. Almost everybody has a “Famous” chicken salad recipe and I encourage you to make that recipe. There is a lot of flavor going on in this sandwich. For the cheese I used a sharp cheddar. I think any milder cheese would be lost in the flavors. I like my chicken salad cold and my croissants warm. Weird but it works. I will leave that up to you on how to serve this sandwich. Sandwiches are fun. Let this sandwich be inspiration for you to create another sandwich. I think this blackberry sauce would even be great on a grilled turkey and cheese sandwich.

I have separated the recipes below.
