Nothing says Fall like apple recipes. Ok well, maybe pumpkin spice everything says it better. You know how we food bloggers are. 

My youngest requested some apple muffins. I thought that was a brilliant idea and already had strawberry, pear, and blueberry muffins on this website. How could I leave out apple muffins?! Plus I can’t say “no” to my little guy. He has come up with a few recipe ideas that I have developed on this site. Not too shabby for a 5-year-old. He will be promoted to creative director when he turns 6 years old.

There are 2 kitchen tools I can’t live without. My peeler and my corer. When you have kids that love apples these tools are used nearly daily. Apples and peanut butter are a favorite after-school snack. Just like crusts having to be cut off sandwiches the apple have to be peeled.

How to Make Apple Muffins

Ready to make a delicious batch of apple muffins? Follow these simple steps:
First, whisk together flour, baking powder, salt, nutmeg, and sugar in a large mixing bowl. Cut in butter with a fork.
In a separate bowl, mix together the grated apple, egg, and milk.

Pour the apple mixture into the flour mixture and combine with a wooden spoon. Mix just until combined – too much stirring will make the muffins dense and hard.
Line a muffin pan with muffin or cupcake liners and fill each cup ¾ of the way full. Bake at 375°F for 20 minutes or until golden on top.

A little note on mixing the muffin batter.

These apple muffins are moist and delicious. When they are warm right out of the oven they are irresistible. The trick to great muffins is not over-mixing the muffin batter. You want to mix the ingredients with as few strokes as possible. If you use an electric mixer you will over mix and they will be hard like hockey pucks. It is best to mix muffins using a wooden spoon.

Apple Muffins

Ingredients

  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 cup sugar
  • 1/3 cup butter, softened
  • 1 granny smith apple, peeled, cored, and grated
  • 1 egg
  • 1/4 cup milk

Instructions

  1. In a large mixing bowl whisk together flour, baking powder, salt, nutmeg, and sugar.
  2. Cut in the butter with a fork.
  3. In a separate mixing bowl mix together the grated apple, egg, and milk.
  4. Pour the apple mixture into the flour mixture.
  5. With a wooden spoon mix until just combined. Try to use the least amount of mixing strokes as possible. Over mixing will make the muffins dense and hard.
  6. Line a muffin pan with muffin/cupcake liners.
  7. Fill the cups 3/4 of the way full.
  8. Bake at 375F. for 20 minutes or until golden on top.
