The strawberry season is coming to a close here in Southern Maryland. Homegrown or local fresh picked strawberries are the best. I already can’t wait till next season. I used my last basket of strawberries to make these Strawberry Muffins.
Ingredients
- Dry Ingredients
2 cups all purpose flour
1 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt
- Wet Ingredients
2 eggs
1 cup of half & half
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups chopped strawberries
Instructions
In a large mixing bowl mix together the dry ingredients.
In a different mixing bowl mix together the wet ingredients.
Pour wet ingredient mixture into the dry ingredients and mix till well blended and smooth.
Fold in strawberries.
Grease your muffin pan or use paper cups.
Bake at 350 degrees for 17-20 minutes.
Makes 12 muffins.
