This easy and refreshing Watermelon Mint Feta Salad is the perfect summer side dish and ready in just 5 minutes. Juicy watermelon, tangy feta, crisp red onion, and fresh mint in every refreshing bite.

When it’s hot outside and cooking feels like a personal attack, this Watermelon Feta Salad is my go-to move. It’s cold, crisp, and comes together in minutes. No oven, no stove, no stress.
The sweet, juicy watermelon mixed with salty feta and fresh mint is exactly what summer tastes like. A little red onion adds just the right bite, and suddenly you’ve got a favorite summer salad that feels fancy but takes zero effort.
This is the kind of dish that shows up at BBQs, pool parties, or on your plate while you’re hiding inside with the A/C blasting. It’s refreshing, light, and somehow disappears every time I make it. Whether you’re feeding a crowd or just need something cold and satisfying to eat straight out of the mixing bowl, this one hits the spot.

My Twist on the Classic Watermelon Feta Salad
What sets my version of this watermelon salad apart? The red onion. Hear me out! While most watermelon mint feta salads stick to the sweet and salty combo of fruit and feta, that paper-thin slice of sharp red onion changes everything. It cuts through the sweetness and adds a little bite that keeps the whole salad from being too one-note.
It’s unexpected, a little bold, and exactly why people go back for seconds!
Top Tip for the Perfect Watermelon Mint Feta Salad!
Use Seedless Watermelon: Nobody wants to pick seeds out of their salad. Seedless varieties make this easier to enjoy.
Red Onion Tip: If you find raw onion too sharp, soak the slices in ice water for 5–10 minutes before adding them. This mellows the flavor.
Make It Ahead: You can cube the watermelon and prep the onions and mint ahead of time, but don’t toss everything together until just before serving. This keeps the salad crisp and fresh.
Add a Dressing (Optional): Some people like a drizzle of balsamic glaze or a squeeze of fresh lime juice for extra tang. It’s not required, but it’s delicious!
Serving Ideas: This salad pairs well with grilled chicken, burgers, or BBQ ribs. Basically, it’s what you serve when the weather says, “we’re eating outside today.

Storage Instructions:
This salad is best enjoyed fresh, but you can store leftovers in an airtight container in the refrigerator for up to 1 day. Keep in mind that the watermelon will release juices as it sits, which can make the salad watery.
If you’re making it ahead, store the cubed watermelon, crumbled feta, sliced onion, and chopped mint separately, then combine just before serving for the crispest, freshest results.
