Refreshing Raspberry Moscow Mule Cocktail

If you love raspberries, ginger beer, or lime cocktails that are as pretty as they are delicious, this Raspberry Moscow Mule is calling your name.

Raspberry Moscow Mule

With zingy ginger beer, fresh lime juice, and a burst of juicy raspberry flavor, it’s the perfect balance of sweet, tart, and refreshing. The best part? It’s totally customizable—make it stronger, sweeter, or even skip the booze for a refreshing mocktail. However you mix it, this ice-cold summer cocktail is made for sunny afternoons and good vibes.

This recipe came to me during raspberry season. I was making my Classic Moscow Mule and had an idea for all my extra raspberries … and so the Raspberry Moscow Mule was born. Perfect for summer pool parties, with my baked brie or my Rotel dip

What Makes a “Mule”?

Very few drinks are so famous that they warrant their own cup, and the mule is one of them. A classic “mule” has three main components: vodka, lime juice, and ginger beer. For another fun twist on the classic, try my Kentucky Mule – it has all the ingredients of the traditional mule, it just swaps the vodka for some good old-fashioned bourbon.

Ingredients for Your Raspberry Mule Cocktail Recipe

  • Fresh Raspberries – Fresh, juicy, and ripe raspberries make the best cocktail. If you are using frozen raspberries, I recommend thawing them at room temperature before you muddle them.
  • Simple Syrup – If you are using sweetened ginger beer, such as Goslings, you will want to omit the simple syrup. Simply refer to the nutrition label to check the sugar content. For this recipe, we used Fever Tree Ginger Beer, which is not sweet.
  • Vodka – We love Titos, it is our favorite vodka for cocktails. I recommend using plain vodka but you can use raspberry vodka for an even stronger raspberry flavor.
  • Ginger Beer – we used Fever Tree for this recipe. If you want to skip the simple syrup you can use ginger beers with higher sugar content.
  • Lime – You will need fresh limes for the juice and to cut wedges for the garnish.

How to Make a Raspberry Moscow Mule

  1. In your copper mug gently muddle the raspberries. You want to release their juice and flavor but avoid crushing them completely.
  2. Pour the simple syrup over the muddled raspberries.
  3. Fill the copper mug full of ice.
  4. Next, add the vodka and lime juice.
  5. Top off the Raspberry Moscow Mule with ginger beer.
  6. Give it a gently stir and garnish with fresh raspberries, a lime wedge, and some mint.

Tips & Notes

  • Simple Syrup – This recipe uses Fever Tree Ginger Beer. Be sure to check the sugar levels of the ginger beer you choose. If it contains a significant amount of sugar, you might consider skipping the simple syrup. Regardless, feel free to use the simple syrup to adjust the sweetness to your preference.
  • If you don’t have copper mugs double walled insulated cups will keep your drink ice-cold.

Cocktail to Mocktail

Going booze-free? Just leave out the vodka and top with a little extra ginger beer. Alternatively, you can buy some alcohol-free vodka substitutes. You’ll still get all the vibrant fruit and citrus flavor, just without the hangover the next morning.

What to Serve with Your Raspberry Mule

This cocktail pairs perfectly with light appetizers like my Italian Pinwheels – Just roll them up and slice. No cooking required. Next up are my Burrata Caprese Crostini. Toasted bread topped with Burrata, Tomatoes, and Basil drizzled with a Balsamic Glaze. For something really special, try my Instant Pot Boiled Peanuts This instant pot recipe will have you snacking on these Hot Boiled Peanuts in just a few short hours.
