Nothing says tropical cocktail like rum and fresh fruit juices. The Acapulco cocktail is light, tasty, and perfect for sipping by the pool or beach.

Named after the location Acapulco is a beach resort town on Mexico’s Pacific coast. Acapulco is known for its high-energy nightlife, beaches, and golf. Can’t make it? No problem, drink as they do with this Acapulco cocktail. 

There are a few variations on this cocktail like this one with Tequila.

Ingredients for an Acapulco Cocktail

  • White Rum
  • Triple Sec or Cointreau
  • Egg White
  • Lime
  • Sugar
  • For garnish: lime wheel and mint

Egg Whites

Some people get grossed out at the thought of egg whites in a drink. I get it! It does sound gross. Trust me, your drink won’t taste like eggs. What the egg protein provides is a nice texture and silky foam. The egg white unravels in the cocktail shaker during the shaking process and turns into little bubbles. So shake it up really well!

Cointreau vs. Triple Sec

Either liquor works. I prefer Triple Sec because it is sweeter than the Cointreau. My husband prefers the Cointreau because he doesn’t like super sweet drinks. Sweet or not so sweet, it is your choice.

Ingredients

  • 2 ounces white rum
  • 1/2 ounce Triple Sec or Cointreau
  • Juice from 1/2 lime
  • 1 tsp sugar
  • 1 egg white
  • Fresh mint and lime wedge for garnish

Instructions

  1. Add rum, triple sec, lime juice, sugar, egg white and a hand full of ice to a cocktail shaker.

  2. Shake vigorously.
  3. Strain into a glass over crushed ice.
  4. Garnish with mint and lime.
