Chicken Salad and Blackberry Croissant

Trust me! You are looking at a fabulous chicken salad sandwich. You may have scrunched up your face at the thought of blackberry sauce on your sandwich. Believe me it makes a wonderful spread for sandwiches.

This past week I have been sharing different ways to enjoy my homemade blackberry sauce. It is simple to make with just a few ingredients.

So let’s talk about this sandwich. Almost everybody has a “Famous” chicken salad recipe and I encourage you to make that recipe. There is a lot of flavor going on in this sandwich. For the cheese I used a sharp cheddar. I think any milder cheese would be lost in the flavors. I like my chicken salad cold and my croissants warm. Weird but it works. I will leave that up to you on how to serve this sandwich. Sandwiches are fun. Let this sandwich be inspiration for you to create another sandwich. I think this blackberry sauce would even be great on a grilled turkey and cheese sandwich.

Chicken Salad and Blackberry Croissant

Makes 2 Sandwiches

Ingredients
2 croissants cut in half.
1 cup chicken salad
2 Tbs blackberry sauce (recipe follows)
2 slices NY Sharp Cheddar
alfalfa sprouts (to taste)

Directions
Place slices of cheese on croissant and lighly toast to melt the cheese.
Spread desired amount of chicken salad onto croissant.
Top with desired amount of alfalfa sprouts and drizzle blackberry sauce.
Top with other half of croissant and serve.

 Blackberry Sauce

Ingredients
1 cup fresh blackberries
1/4 cup water
2 Tbs and 1 tsp sugar
1/2 tsp lemon juiceDirections
Place all ingredients in a small saucepan.
Cook over a medium heat and stir.
Once the mixture comes to a boil remove from heat.
Using a potato masher smash blackberries.
Give the mixture a stir and let cool before serving. – See more at:
