The smooth minty Mojito gets a flashy remake with coconut rum and the addition of pineapple juice.

The only reason why I grow mint on my back deck is for cocktails. My favorite mint-infused cocktail is the Mojito. I will suck these down one after another on a hot summer day! Today I switched out the white rum for Cruzan Coconut Rum and added some pineapple juice for a flavorful twist on the classic! These refreshing tall coolers are a must-have summer cocktail.

Ingredients for Pineapple Coconut Mojito (Pina Colada Mojito)

  • Lime
  • Mint
  • Coconut Rum
  • Pineapple Juice
  • Club Soda
  • Ice
  • Sugar

How to make a Pineapple Coconut Mojito

In a highball glass muddle the lime juice, mint, and sugar. 

Next, add the ice and remaining ingredients and stir. 

Finally, garnish with a sprig of mint and lime slices.

Ingredients

  • Fresh squeezed juice from half a lime.
  • 6 mint leaves
  • 1 tsp sugar
  • 2 oz. coconut rum
  • 3 oz. pineapple juice
  • 3 oz. club soda
  • 1 cup crushed ice

Instructions

  1. In a tall highball glass muddle together the lime juice, mint and sugar.
  2. Add ice, pour in remaining ingredients, and stir.
  3. Garnish with a sprig of mint and lime slices.
