Vanilla mini donuts baked with fresh strawberries and then frosted with a milk chocolate ganache.

Strawberry season is here and with it comes an abundance of strawberry recipes. So many that in fact, you can easily burn yourself out with strawberry flavored everything. Are you one of those families that when the local strawberry farm opens up for strawberry picking you come home with 10lbs of strawberries? It is ok. We do it too.

Chocolate Frosted Strawberry Donut

When you bake these and they come out of the oven they are UGLY! The tops are uneven due to the strawberries. Not to worry we are going to cover them up with milk chocolate frosting. Chocolate makes everything better.

Chocolate Frosted Baked Strawberry Donuts

Ingredients for donuts
1 cup flour
3/4 cup sugar
1 tsp baking powder
1/4 tsp ground nutmeg
1/4 tsp kosher salt
1 large egg
3/4 cup milk
1 Tbs melted butter
1 1/2 tsp pure bourbon vanilla extract
1 cup diced fresh strawberries

Ingredients for chocolate frosting
1/2 cup milk chocolate chips
1 Tbs butter cut into pieces
1 tsp light corn syrup
1 Tbs milk

Directions for donuts.
Lightly spray cooking spray in donut pan.
Preheat oven to 350F.
Set strawberries aside for now. They will be folded in after everything is well combined.
Mix dry ingredients in a mixing bowl.
Mix wet ingredients in a separate mixing bowl.
Slowly pour dry ingredients into wet ingredients and mix until well combined.
Fold in strawberries.
Pour batter into a piping bag or ziplock bag and cut the end off.
Pipe batter into the donut molds about 3/4 of the way full.
*You can spoon the batter into the molds but the bag method is a lot cleaner, faster, and easier.
Bake for 16-18 minutes.
Let donuts cool. (The tops are ugly right? This is where the chocolate makes everything better.)

Directions for chocolate frosting.
There are 2 ways you can do this. You can use the double boiler method or the microwave method.
Double boiler: place all ingredients into double boiler and slowly melt ingredients. Stir constantly. Remove from heat once chocolate is melted and you have a silky consistency.
Microwave: place all ingredients into microwave safe bowl. Microwave for 15 seconds stirring in between cooking times until fully melted. If your chocolate burns or drys out add a tablespoon of milk and stir until smooth again.

Directions for frosting the donut.
Dip and swirl donuts in the chocolate frosting and place on a rack for the frosting to set.  About 20 minutes.

Serve after chocolate has set (if you can wait that long).
