There is nothing like putting the slow cooker to work on a chilly day. For dinner, I am roasting a chicken with stuffing and making this Crock Pot Green Beans and Potatoes recipe.
This Crock Pot Side Dish recipe cooks on high for 4 hours. You can imagine how wonderful my kitchen was smelling. Green beans in a crockpot cook until they are nice and tender. The potatoes are firm yet still melt in your mouth.

Ingredients for Easy Crockpot Green Beans and Potatoes
- Potatoes
For this recipe, I used red potatoes sliced in half. The red potatoes hold up to the high temperature of the slow cooker.
- Green Beans
I use fresh green beans from the produce section. I don’t use frozen. Nothing beats fresh green beans. Just be sure to trim and cut the green beans before throwing them into the slow cooker.
- Shallots or Onions
You can swap out shallots for an onion. I like shallots because they have a mild garlic flavor but using either is fine. If you choose to use an onion be sure to dice it instead of slicing it into rings.
- Chicken Broth
The chicken broth is an absolute must for maximum flavor. The chicken flavor infuses into the vegetables enhancing their flavor.
The red wine vinegar can be optional. It gives the vegetables a little zing.

Serve this crockpot potato recipe with roasted chicken, beef, or pork.
Green Beans and Potato Variations
- Add cooked, chopped bacon to your crockpot once the green beans and potatoes are done cooking.
- Add diced ham or chunks of ham.
- Swap chicken broth for beef broth.

Ingredients
- 1 pound red potatoes, sliced in half or quartered
- 1 pound green beans, trimmed and cut
- 1 small onion or 2 shallots, thinly sliced
- 2 cups water
- 2 cups chicken broth
- 4 tablespoons butter
- 1 tablespoon red wine vinegar (Optional)
- salt and pepper to taste
Instructions
- Place all ingredients in the slow cooker.
- Cover and cook on high for 4 to 4 and 1/2 hours
