My creamy chicken poppy seed casserole is nothing if not the perfect recipe for your leftover chicken. It takes the two day old chicken that no one is in the mood for, and it turns it into a piping hot, creamy chicken casserole with a buttery cracker crust on top. Now, doesn’t that sound delicious?!

Personally, I find that the buttery cracker topping is what takes this recipe from a once a year type recipe to a bookmarked favorite you come back to time and time again.
When the crushed crackers bake in a bit of melted butter, they turn golden and crisp, creating a crunchy lid that contrasts perfectly with the creamy chicken filling beneath. That little bit of texture keeps every bite interesting. And don’t skip the poppy seeds! Those tiny black specks bring a subtle nutty flavor and a pretty, speckled look that makes this simple dish feel just a bit more special.
And this recipe comes together in minutes! Quick, easy, and delicious! All the requirements for a perfect dinner.
Ingredient Highlight: Shredded Rotisserie Chicken
I love making all kinds of chicken recipes, but sometimes when life gets busy, I just grab a big, juicy chicken from Cosco on the way home. But since it is just me and my husband, a whole chicken lasts quite a while and after a couple of Hawaiian grilled chicken sandwiches, well … it gets a bit boring.
Thats where this recipe comes it! It’s absolutely perfect for leftover chicken, turning it into something delicious!
Here are some other recipes I use shredded rotisserie chicken in: my creamy chicken taco soup is a family favorite stovetop recipe. You will also love my buffalo chicken dip or southern homemade chicken and dumplings.

Chicken Poppy Seed Casserole Top Tips and Variations
- Swap the soup: No cream of chicken? Use cream of mushroom or cream of celery—both taste great and keep that silky texture.
- Lighten it up: For a slightly tangier, lighter casserole, trade half of the sour cream for plain Greek yogurt.
- Add veggies: Stir in a cup of frozen peas, diced carrots, or sautéed mushrooms for extra color and nutrition.
- Cheesy twist: Sprinkle 1 cup of shredded cheddar or Swiss over the chicken mixture before adding the cracker topping for a creamy, cheesy finish.
- Make-ahead magic: Assemble the casserole up to 24 hours in advance, cover tightly, and refrigerate. Bake as directed, adding 5–10 minutes to the cooking time if it goes into the oven cold.

Storage Instruction
If you have leftovers (lucky you!), let the chicken poppy seed casserole cool to room temperature, then cover it tightly or transfer to an airtight container. It will keep well in the refrigerator for up to 3–4 days. The cracker topping softens a bit over time, but a quick reheat in the oven brings back some crunch.
Freezing Instructions
To freeze, wrap the entire baked casserole—pan and all—in a double layer of foil or portion it into freezer-safe containers. It freezes beautifully for up to 3 months.
Reheating Instructions
Thaw overnight in the fridge, then reheat at 350°F (175°C) for about 25–30 minutes, loosely covered with foil so it warms through without drying out. For a crisper top, remove the foil for the last 5 minutes.
