This easy dump and go crock pot recipe is one of my comfort food go-to recipes. My Chicken and Stuffing Crock Pot Recipe has only 5 ingredients and can be a meal all by itself. I serve this up in a bowl if I am only eating chicken and stuffing. If I am serving sides I serve on a plate with more comforting goodness like green beans or sweet potatoes. 

Chicken breast vs. chicken thighs

You can use either breasts or thighs or a combination of both. You don’t need to adjust anything. The recipe still works.

If you have picky eaters and will only eat white or dark meat pull out the chicken meat before shredding and stirring. Shred and stir in the cuts of meat separately.  

We prefer chicken thighs because they are juicier and don’t get dry like chicken breasts.

Some fair warning: Every time I make this I spray my slow cooker with nonstick spray. Every time I have some stuffing stick to the bottom.

Slow Cooker Chicken and Stuffing

Ingredients

  • 2 boxes Stuffing chicken flavor
  • 1 onion diced
  • 2 cans cream of chicken soup
  • 1/2 cup chicken broth
  • 1.5 lbs boneless chicken thighs

Instructions

  1. Spray your slow cooker with cooking spray.

  2. Add stuffing mix, onion, cream of chicken soups, chicken broth and stir. 

  3. Lay chicken thighs on top. 

  4. Cover and cook on high for 4 hours and 30 mins. 

  5. Shred chicken and stir into the stuffing mixture. 

  6. Serve!
