This easy dump-and-go crockpot recipe is one of my comfort food go-to recipes. My Chicken and Stuffing Crock Pot Recipe has only 5 ingredients and can be a meal all by itself. I serve this up in a bowl if I am only eating chicken and stuffing. If I am serving sides I serve on a plate with more comforting goodness like crock pot green beans or candied yams with bourbon.
Chicken breast vs. chicken thighs
You can use either skinless chicken breasts or thighs or a combination of both. You don’t need to adjust anything. The recipe still works. We prefer chicken thighs because they are juicier and don’t get dry like chicken breasts, but you do you!
If you have picky eaters and will only eat white or dark meat pull out the chicken meat before shredding and stirring. Shred and stir in the cuts of meat separately.

Ingredients
- 2 boxes chicken-flavored stuffing mix
- ½ onion, diced
- 2 (10.5 oz) cans cream of chicken soup
- 1 cup chicken broth
- 1½ lbs boneless chicken thighs (or chicken breasts)
Instructions
- Lightly spray your slow cooker with cooking spray.
- In a large mixing bowl, combine the stuffing mix, diced onion, cream of chicken soup, and chicken broth. Stir until everything is well mixed.
- Spread the stuffing mixture evenly in the bottom of the slow cooker.
- Place the chicken thighs (or breasts) on top of the stuffing mixture.
- Cover and cook on High for 4½ hours, or until the chicken is tender and cooked through.
- Shred the chicken directly in the slow cooker and stir it into the stuffing until evenly combined.
- Serve.
