This easy crockpot meal makes Taco Tuesday a breeze. The tender chicken is slow cooked in Salsa and taco seasonings. The added bell peppers and onions give the recipe some texture and flavor. Top your crockpot salsa chicken tacos with all the traditional taco toppings.

This salsa chicken also is great in other Mexican dishes like enchiladas or tamales.

Recipe tips for Crock Pot Chicken Tacos

This Crock Pot Salsa Chicken Tacos recipe is so simple! Here are some tips to make them extra delicious.

  • Fry your Flour Tortillas – Heat a cast-iron skillet on medium heat. Place a flour tortilla in the center. Turn it every 20 seconds to get the desired char marks. No oil or butter is necessary!
  • The Fixings – Serve up these tacos with shredded lettuce, shredded cheese, and sour cream.
  • Flavorful Garnishes – Garnish the tacos with roughly chopped fresh cilantro and squeeze a lime wedge sprinkling the juice over the top of the tacos.
  • Homemade Taco Seasoning vs. Packets – In the recipe, I have given the option to use a taco seasoning packet or use my Taco Seasoning Mix. I haven’t used a taco seasoning packet in years. I strongly recommend making your own taco seasoning. See my original post on Taco Seasoning Mix for directions on cooking it with ground beef.
  • Drain the Juice! When making the tacos scoop out the chicken mixture with a slotted spoon or use a fork. Even when using a slotted spoon or fork these tacos are juicy!

Slow Cooker Chicken Tacos full of tender chicken, peppers, onions and salsa.

Ingredients

  • 15.5 oz. jar of chunky salsa, divided. (choose your preference of mild, medium, or hot)
  • 1.5 pounds boneless skinless chicken breasts
  • 1 packet of Taco seasoning or my Homemade Taco Seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 red onion, sliced
  • flour tortillas

Instructions

  1. Pour half of the salsa into the slow cooker and spread evenly along the bottom.
  2. Add the chicken breasts.
  3. Sprinkle the seasoning mix over the top of the chicken breasts.
  4. Add in the sliced peppers and onions.
  5. Pour over the rest of the salsa.
  6. Cover and cook on high for 4 hours.
  7. Gently shred the chicken using a fork.
  8. Stir the mixture so the seasoning, chicken, and vegetables are evenly distributed.
  9. Serve with flour tortillas and traditional taco toppings.

Notes

Crockpot Salsa Chicken is also a great filler for burritos, enchiladas, and taquitos.
